Having a restricted diet doesn't mean you don't get to enjoy some classics! Nachos are a delicious treat, and are cheap & fast to prep. With the super bowl coming up next weekend, this a great option for a party. It's one of those dishes that can easily meet everyone's dietary needs.
I bake them at 425' for ~7mins. I use Daiya Vegan Cheddar Cheese, which I buy at Whole Foods. Actually, whenever I see the cheese on sale I grab a bag and make nachos that week! I dip them in homemade guac and vegan sour cream. If I buy guac at the store to save extra time, I make sure there are only a few ingredients and I know what all of them are. I've seen guac with like 20 ingredients - so unnecessary, and probably tastes horrible.
Salsa is a good option too. I have GERD (acid reflux) so I have to limit tomatoes.
* I lay aluminum foil on the baking sheet for easier clean up later on.
