Eliminating refined sugar from my diet has opened up my world of snacks. I recently discovered these gems, and am so grateful I did. I've always been a fan of Larabars, but I ate too many at once and have had to take a long time off. These date balls are similar since the base is dates, but I didn't add any nuts so they're different enough. They are SO easy, so quick, and absolutely delicious!
As always, they are gluten free, dairy free, & refined sugar free. And soy free :)
- ~30 chopped dates (I buy the package with the pits removed)
- 1/2 cup unsweetened cocoa
- 1 tbsp vanilla extract
- A little less than 1/3 cup unsweetened coconut flakes [or sub nuts]
Add the ingredients into your food processor, let it spin for a little bit, and voila! All you have to do is roll the doughy mix into about 1" size balls and enjoy. For a little extra you can roll the balls in more cocoa powder, coconut flakes, etc. Just pour whatever the extra will be into a bowl or plate and roll the balls around until you're satisfied.
